Olive Oil Inspirations for the Holiday Season

 
 

Nutritious nourishment - Well Deserved

What a year we’ve all had! Wherever you were in the world this year, you’ve felt the aftershocks of change, of a shifting world on many different levels. As if the external changes in our environment weren’t enough, we’ve all had to deal with our internal health, growth and sanity. Even though the holidays will be celebrated differently in 2020, we hope that they bring you days of rest and recuperation after these stressful months. We hope that they bring you a smile, a laugh, peace and a welling up of joy and gratitude to be living, experiencing and taking in life’s pleasures.

Nature has been our place of respite, and our greatest sense of joy. It reminds us of seasons cycling, of our innate abundance and of the healing properties in observing its beauty. Our Kula olive grove has kept us sane this year, and we are truly grateful for the opportunity to share another season of oil with you. It is nutritious nourishment, well deserved!

To get your tastebuds tingling with excitement, here is a simple homemade pizza dough that you can do EVERYTHING with. Have it naked with salt and herbs; add toppings; make it sweet, savory, salty, fragrant — you chose! It is a great as a side to your main, or make it a main with any leftovers you’ve got! — For example, pictured here we’ve got left over shish kabab with Indian spices, local vegetables, Swiss gruyere cheese, and local micro greens with drizzles of PK oil. Yummmmmy.

Now back to the recipe on the Basic Dough:

Prepare the dough by adding:

  • 1 1/3 cup warm water, with 2 1/4 tsp Red Star dry yeast, and 1 Tbs granulated sugar to a bowl.

Stir and let it sit five minutes to get the yeast bubbling.

  • Add 2 Tbs PK olive oil, 3/4 tsp salt, and 3 1/2 cup all-purpose flour or a mix with wheat flour (up to you).

Knead it like you mean it for a few minutes into the dough feels soft and all ingredients feel incorporated.

Grease a large bowl and place the dough in there to rise, covering the bowl with a clean hand towel. Let it sit there for 60-90 minutes until it has doubled in size. (For those in colder climates, let the oven help your dough out by heating up the oven to 165 F and turning it off, allowing the dough to sit in that residual heat.)

When it’s ready, prep the oven on 425 F, punch that dough down and grab the flour and start rolling it out to your desired thinness. (We usually make two pizzas from the dough and roll it out).

Brush the crust with PK olive oil.

Sprinkle with salt, fresh rosemary or oregano if desired.

Put it in the oven for 10-15 minutes. Serve and enjoy life’s simple pleasures!
